Walnut and Apple Rice

Sweet and savoury at the same time! This makes two servings.

Ingredients can be adjusted to different quantities if you please.


  • 200g cooked brown basmati rice
  • 1 apple chopped into cubes
  • 1 stick of celery thinly sliced
  • 24g raisins (1 bought snacksize boxes and used two)
  • 60g walnuts
  • Coconut oil for frying the rice

Add oil to the pan and lightly fry the boiled rice for a couple of minutes until warmed.

Add to plate or tub (if eating later cold) and add all reaming ingredients.
